Our Production Story

Our organic extra virgin olive oil is crafted exclusively from healthy, ripe olives grown in the Sabina region. We are dedicated to traditional methods, beginning with a careful, hand-picked harvest directly from the tree.

The harvest period varies by season, starting at the “invaiatura” stage—when the olives begin to turn from green to black. At this point, the oil yield is lower, but its quality is superior.

Acidity is a key indicator of quality, and by law, an extra virgin olive oil must have an acidity below 0.8%. Our oil boasts a remarkably low acidity ranging from 0.2% to 0.6%, well below the legal limit and a testament to its freshness and purity.

Not all olive varieties mature at the same time. We typically start our manual harvest in the first weeks of October and finish just before Christmas, ensuring each olive is picked at its peak.

To preserve the delicate organoleptic qualities of the fruit, we take the olives to an organic oil mill on the same day they are harvested. The oil is then extracted using cold-pressing and mechanical methods only. This is a first-press extra virgin oil, free from chemical manipulation.

We intentionally choose not to filter our oil, allowing it to retain the healthy components responsible for its fruity flavor. As a result, a natural sediment may form at the bottom of the container over time.

Our oil’s color ranges from a deep green to a golden yellow. It has an intense aroma of olives, grass, and artichoke, and it’s perfect for enhancing the flavor of any dish—from vegetables and pasta to white meats and bruschetta.
